The second most consumed mushroom in the world after the button mushroom is the shiitake mushroom, botanically known as Lentinula edodes. Shiitake mushrooms are a member of the Marasmiaceae family. Shiitake mushrooms, also referred to as Dongo, Shanku, Black Forest, Shiang-gu, Oak, and Black mushrooms, are found in bunches on dead hardwoods such as, beech, maple, oak, and poplar. koshin, a mushroom with thinner meat and an open crown, and a highly prized mushroom that is more rounded and has thicker flesh. Because the cap only partially opens and maintains more spores, they are prized for their medicinal properties. Worldwide, shiitake mushrooms are grown for their umami flavor and chewy, dense texture.
