Shiitake mushrooms, also referred to as Dongo, Shanku, Black Forest, Shiang-gu, Oak, and Black mushrooms, are found in bunches on dead hardwoods such as, beech, maple, oak, and poplar. koshin, a mushroom with thinner meat and an open crown, and a highly prized mushroom that is more rounded and has thicker flesh. Because the cap only partially opens and maintains more spores, they are prized for their medicinal properties.
