Blue Green Oysters

Writer: Sarah Sue DuffySarah Sue Duffy

Blue oyster mushrooms, or Pleurotus ostreatus var., are known scientifically. Columbinus is a classification of shelf fungus belonging to the Pleurotaceae family. Over 200 different subspecies of oyster mushrooms are estimated to exist, and the flat-capped fungi are one of the most extensively grown mushrooms in the world. On dead logs, tree stumps, and stumps, large, overlapping clusters of Blue Oyster mushrooms are common in the northern hemisphere. In contrast to other oyster mushrooms, these grow quickly, are aggressive, and can withstand cooler cultivation conditions. Commercial mushroom farmers prefer Blue Oyster mushrooms because of their distinctive color, ease of cultivation, and quick colonization. The subspecies are widely available for purchase from online stores by amateur growers for home production.
